I enjoyed an 8 week program I did with a nutritionist a few months ago.  I was looking to become slim again  and thought that a program might help. We looked at what I was eating and how that could be changed where necessary  to support me to get  where I wanted to go.

The nutritionist was a great advocate of eating green veggies and was passionate about kale. I had only cooked kale a few times, and when I did it was usually lightly fried with onions in a  little olive oil. The closest I got to eating it raw was nibbling a  bit of the kale when chopping and cooking.

Okay, perhaps “Hail to the Kale” is an insipid title for an article.  Let’s face it; kale is a hard word to rhyme.  But, it’s better than the title I first came up with:  “If kale had a degree, it’d be from Yale.”

I guess what my feeble attempts at a clever title are trying to achieve is to convey kale’s amazing qualities.  And, yes, a vegetable can be amazing.  Particularly when it’s loaded with substances that can help protect one from cancer, cataracts, emphysema, and rheumatoid arthritis.

Kale is not particularly a staple in most American households, but, after reading this article, I hope kale becomes a staple in your house.  Some may consider kale bitter, and, admittedly, some varieties of kale are on the bitter side.   The secret to eating kale, then, is to (more…)

Hello!

My name is Fiona, and I wanted to share with you how raw greens have helped transform my health.   January was my one year anniversary of healthy thyroid function. Woohooo!

In December 2008, I was diagnosed with hyperthyroidism. To my horror, I was told by my GP that surgery would probably be needed to remove 3/4 of my thyroid gland, leaving me dependent on medication for the rest of my life. This didn’t feel like a road I wanted to go down at all.

I believe that, when working properly, our bodies are able to heal themselves. That all illness or dis-ease is caused by energy blockages within our bodies where emotions get trapped and repressed. I have not always thought this way - but since (more…)

Victoria’s Juicy Secrets

green juice beet juice fruit juiceHonestly? I love vegetables, I really do, but their liquid form has always struck me as somewhat repulsive. I think it had to do with a juice I ordered once perhaps a decade ago - apple-carrot something or other, or maybe it was ginger-celery this and that. Wanting to drink it up because it was healthy, I took two giant gulps before realizing the unusual taste had my stomach turning queasy somersaults.

Tomato juice has always been okay by me, probably because it’s so salty it just tastes like a chilled soup. But the pungent, earthy quality of other liquefied vegetables always seemed epicureanly wrong. Carrots tasted sweet yet pasty. Celery had a strange kick of licorice. And cucumber, with its bland, green chill? No thank you!

What I didn’t realize until recently is that there’s a secret to making vegetable drinks not only palatable but positively, thunderously delicious: greens.

See, many leafy greens - spinach, chard, kale, collards - don’t actually affect the taste of the concoction, especially if you’re savvy about incorporating flavors you love. The luxurious, golden tones of ripe fruit are a great place to start. (more…)

Is There Such a Thing as Too Many Greens? Q & A with Dr. Ritamarie Loscalzo

Whenever people begin to take their baby steps down a new path to health, especially a path that involves the marvelous and luminous wonders of blended green drinks, there are inevitably questions.

Three of the questions we received were so good, we decided to check with Dr. Ritamarie Loscalzo for some more in-depth answers.

Green Smoothie Q & A With Dr. Ritamarie Loscalzo

Q1:   How much greens are too much?

A:   It’s hard to eat too many greens, unless you are choosing only one type.  If you eat a variety, it would be hard to get too much.  I recommend eating 2 pounds of green leafy vegetables a day.

When using green juices for cleansing, it’s not uncommon for a person to consume up to 4 pounds of greens a day.   There are no side effects, unless you happen to be on anti-coagulant medication and the excess Vitamin K consumption may interfere with the drugs.  In cases like this, monitoring intake and working with a doctor knowledgeable about nutrition is advised.

If you get excess of any water soluble nutrients, your body can store some and eliminates the rest.

Q2:     Can the body utilize the full amount of Vitamines given in a nutritional breakdown? I.e. if 1 cup of kale (how much is that in grams?) has 10,000 units of Vitamine A, can the body utilize all of it?

A:   Depends on how deficient you are.  The vitamin A in kale and other vegetables is not the fat soluble Vitamin A, which can be toxic in excess.  It’s in the form of beta carotene, which your body makes into Vitamin A as needed.  Beta carotene is a pigment and the excess can be stored in your skin, thus the lovely orangey glow of healthy greens consumers.

Q3:     If using greens such as chard, kale and others high in A and K, should one  even the intake out over a period of time?

A:   I don’t think we need to be so rigid or scientific about it.  Unless you are on anti-coagulant therapy or have a clotting disorder, just eat lots of greens, 2 pounds a day ideally, get a variety and it will all balance out over time.

Saint Patty’s Day GREEN Smoothie!

For each Leprechaun you will need:

  • Handful o’ GREEN Clover from the yard.  (Of course, there’s a four-leaf clover in there! Don’t even bother to look! If you’re still under snow, a few clippings from a potted GREEN Shamrock plant for the Luck o’ the Irish!)
  • Handful o’ GREEN Grapes
  • 4 inches o’ GREEN Cucumber, peeled if it’s not organic; it may be waxed. (The Cucumber will taste like Watermelon!)
  • 1 GREEN (on the inside) Kiwi (The Kiwi will taste like Strawberries!)
  • 1 GREEN Granny Smith Apple
  • A WEE squeeze o’ GREEN Lime…very strong!
  • (LUCKY 7.) 2 Leaves o’ GREEN Kale (If you must sweeten, use GREEN Leaf Stevia.  A few grains go a long way!)

Grab your Pot o’ GREENS and your fiddle.  When you go out for your shenanigans, ask for an empty glass mug. Who needs green b_ _r ?  A brain is as strong as its latest drink!  (A chain is as strong as its weakest link!)  No brain fog…  No hangover…   No regrets!

Orange Apricot Yum!

By Dr. Debra Tibbitts
(makes about 32 ounces)

Ingredients:

  • 3 oranges
  • 4 apricots
  • 3/4 cup water

Directions:

Blend… and then add:

  • 2 large leaves of kale
  • 1 handful baby spinach (optional)

Blend again.  This is one of my favorite green smoothies!

Who Needs Botox?

Woo-hoo! Met up with a friend last week that I haven’t seen for a while. She wanted to know what I’ve been doing to myself ‘as I look ten years younger’! So I pointed her in the direction of our brilliant Green Smoothie Queen site. So Chris, if you’re reading this - thanks for the wonderful compliment and here’s the reason for my new glow!

For all those of you out there who, like me, have been seeing the odd wrinkle and grey hair appear, I’ve been looking at some anti-aging ingredients for smoothies.

First up, there are blueberries. According to http://www.beautynhealthytips4u.com, they are rich in anti-oxidant and anti-inflammatory properties, which make them great for preventing premature ageing and the onset of wrinkles.

Blueberries are also cited by Dr Nicholas Perricone (the anti-aging expert) as a superfood. And surprisingly, he recommends the humble apple for its phytonutrients and the quercetin (an anti-oxidant) it contains, for beauty and health.  Of course, Dr Perricone extols the virtues of dark leafy greens such as kale, spinach, and broccoli (we all know already how wonderful they are!) as great for helping the skin to block the sunlight-induced inflammation which leads to wrinkles.

He also writes that asparagus may help prevent broken capillaries due to the large amounts of the bioflavonoid rutin that it contains. Now I haven’t tried asparagus tips in a smoothie, so if anyone has, I’d love to hear what it’s like!

So play around, fellow green-smoothie drinkers, and let us know any good recipes and any tips for natural anti-aging strategies. (I like to do half an hour’s yoga before making my smoothie. The combination of yoga and the pure, wholesome goodness of the green smoothie keep me serene and frown-free all day).

Diving into Detoxing the Easy Way!

Some of us are diving into the 6-week detox this week.  This means we are up to our ears in green juices and green smoothies.  Last week was a preparatory week for the detox, and this week is technically week one of the GI (gastro-intestinal) repair phase, which is supposed to last for two weeks.  We’re supposed to drink up to 2 quarts of the green stuff a day, either green juices or green smoothies.  I’m there now, but I had to work my way up to that over the last six months!  When I first started drinking  these, green juices especially, I had to add a lot of apple juice and lemon juice to it, but now, I can do more green juice and less fruit.  In fact, now I can munch dandelion greens straight and I even like them that way!  Don’t worry though, I still have a problem with wheat grass juice!  But thankfully, my favourite green detox drinks are simple to make.

In fact, my point of writing this post is to show how easy it is to make up a smoothie, even when you’re on the go.  Last week, a family member was in the hospital, and I was running back and forth because of it.  I never knew when I’d have to pick up and go in a hurry.  Smoothies and salads were my lifesavers!  I’d make a couple smoothies, put them in my stainless steel bottles (which happen to be bright pink!), and away I’d go with no worries about having food in a hostile hospital environment with take-out food everywhere!

Here’s one of the recipes I was carting around in my pink bottles:

Berry Blaster Smoothie

Ingredients:

  • 2 frozen bananas
  • 2 cups frozen blueberries
  • 4 ribs celery
  • 2 giant handfuls kale
  • Small handful dandelion greens
  • 1 T chia seeds
  • 1 T coconut oil

Directions:

Put all the ingredients into your blender and blend (start with the softer ones first if you have a regular blender)!  You might have to do this in batches if you don’t have a high-speed blender.  Of course, you can use fresh bananas and blueberries in place of the frozen, but it’s winter, and this is what I have on hand now.
