Nettles: Wild, Free, and Incredibly Nutritious!

nettlesMy first encounter with nettles was when I was very young. I was walking in a forest in France with my parents when, somehow, I and a couple of other kids got into a patch of nettles. I still remember how badly it itched, and we quickly went home to apply a little vinegar to the affected areas.

Then, many years later while I was attending Law school, I went to the yearly “Salon de l’Agriculture”, somewhat like the County Fairs we have around here. Someone was selling pure nettle juice, which was supposed, amongst other things, to cure skin problems. Since I was then suffering from rather severe acne, I bought a bottle and proceeded to drink a cap of the green liquid every morning on an empty stomach.

Is There Such a Thing as Too Many Greens? Q & A with Dr. Ritamarie Loscalzo

Whenever people begin to take their baby steps down a new path to health, especially a path that involves the marvelous and luminous wonders of blended green drinks, there are inevitably questions.

We had some fantastic questions about green smoothies submitted during our 10-Day green smoothie challenge.  If you are or have been a participant in one of The Queen’s green smoothie programs, you’ll find a  Question and Answer section under “General Green Madness” in The Emerald Lounge.  You can go there to ask your questions of The Queen and periodically we’ll collect the questions and add more answers for everyone to benefit from.

Wondering about how much to drink?  Wondering about giving green smoothies to your children?  Wondering about your pro-biotic digestive health if you’re moving towards a non-dairy diet?  You’ll find answers to those questions and more in our member’s lounge (you can even take The Queen’s Free 3-Day Green Smoothie Mini-Course to become a member! ;-) )

Three of the questions we received were so good, we decided to check with Dr. Ritamarie Loscalzo for some more in-depth answers.

Green Smoothie Q & A With Dr. Ritamarie Loscalzo

Q1:   How much greens are too much?

A:   It’s hard to eat too many greens, unless you are choosing only one type.  If you eat a variety, it would be hard to get too much.  I recommend eating 2 pounds of green leafy vegetables a day.

When using green juices for cleansing, it’s not uncommon for a person to consume up to 4 pounds of greens a day.   There are no side effects, unless you happen to be on anti-coagulant medication and the excess Vitamin K consumption may interfere with the drugs.  In cases like this, monitoring intake and working with a doctor knowledgeable about nutrition is advised.

If you get excess of any water soluble nutrients, your body can store some and eliminates the rest.

Q2:     Can the body utilize the full amount of Vitamines given in a nutritional breakdown? I.e. if 1 cup of kale (how much is that in grams?) has 10,000 units of Vitamine A, can the body utilize all of it?

A:   Depends on how deficient you are.  The vitamin A in kale and other vegetables is not the fat soluble Vitamin A, which can be toxic in excess.  It’s in the form of beta carotene, which your body makes into Vitamin A as needed.  Beta carotene is a pigment and the excess can be stored in your skin, thus the lovely orangey glow of healthy greens consumers.

Q3:     If using greens such as chard, kale and others high in A and K, should one  even the intake out over a period of time?

A:   I don’t think we need to be so rigid or scientific about it.  Unless you are on anti-coagulant therapy or have a clotting disorder, just eat lots of greens, 2 pounds a day ideally, get a variety and it will all balance out over time.

LIVE 10-Day Challenge & “Lucky Links” Contest - Ripple Maker Awards!

During our LIVE St. Patty’s Day 10-Day Green Smoothie Challenge, we were giddy when the generous folks at Blendtec came through with a fantastic prize that had our contest participants excited and spreading green ripples far and wide!

Our “Lucky Links” contest was a new contest that we tried on for size - something that would let anyone, anywhere participate in making green ripples and spreading the word about green smoothies, which is always a goal of ours!  We’re grateful to all of our helpful ripple makers, and we’re delighted to let you know who our top ripple makers were!

Can you believe she was almost too enthusiastic?  We were worried when she wrote to us and told her that she’d been given a ta-ta on the wrist from Wordpress for leaving too many comments.  But thankfully all was forgiven!

And I’m sure we’ve all had files that were there one minute and gone the next.  Even with the missing links that are out there in the ether somewhere, Yvonne was one of our top contributors!

Her faith in us and green smoothies has also  earned her a place in our 21-Day Green Smoothie Detox program.

Apparently our timing was good as she was trying to figure out how to get herself some or any kind of new blender. Her blending worries are over!  Her determination to earn herself the means to finally free herself of lumpy smoothies has been rewarded!

While Kristie rustles us up a picture to send in of her beaming, smiling face, we’ll share with you one of the recipes she sent in during the LIVE 10-Day Challenge:

I like to ‘turn up the heat’ with my ‘Mango Tango’…it’s great for the cold winter here in Ontario.

Mango Tango

(makes about 20 ounces)

Ingredients:

  • 1 cup of a combo of frozen or fresh mango and pineapple chunks
  • 1 cup of carrot juice
  • 1 inch of grated fresh ginger
  • 3 handfuls of greens (Today it was mixed baby greens, but yesterday it was baby spinach.)

Directions:

Blend well.  Then … add a teaspoon of ground flax seeds and blend again.

NOTE: Sometimes if it’s too thick I’ll add some orange juice or water to the desired consistency

Our recent LIVE 10-Day Challenge was a green heaping success!  Our blenders runneth over!  Countless people wrote to me to tell me their stories, to share what an improvement that adding greens made to their lives, and to thank us for our spirit of adventure and fun!

365 Days of Green Smoothies with Jessica - March Update

jessica-mauk-365-green-smoothie-challengerHello fellow green smoothie drinkers!  Well, to put it mildly March was quite a challenge!  My sons came down with strep throat again and mid-way through the month my immune system had finally had enough.  I’d been coughed on one too many times.  I came down with quite the traumatic sinus and respitory infection.  I enlisted the help of the electronic babysitters (computer & TV) and spent three whole days in bed.  Afterwards, I felt a little more human, but my cough hung on for a whole two weeks.

This month definitely tested my commitment to my green smoothie challenge, but I pushed through and didn’t miss a single day!  I can only imagine how badly those germs would have taken me down if I hadn’t been on the green smoothie wagon already!  YIKES!

The last week of the month is host to my oldest son’s birthday.  How did he get to be 7 years old already?  My green smoothies were my saving grace during a weekend full of birthday cake and other party foods.  I can’t believe it April already, but I’ll be honest and say, I won’t miss March!!

Tuesday’s Thoughts

It seems all anyone is talking about today is the healthcare deal that President Obama signed into law this morning. No, I’m not bringing politics into the blog. If you are my Facebook friend, you know where I stand on the issue. But I thought this topic warranted a few musings.

My first thought is that it makes me weep that our country, our society, has come to the point where a health care crisis of this magnitude must even be dealt with. Our health costs are spiraling out of control in large part due to our overwhelming dependence on pharmaceuticals. It’s somehow, somewhere become the normal school of thought that we can do what we please to our bodies, fuel them with whatever is handy, sit them sedentary for hours upon hours each day and then expect a miracle when we visit the doctor to have him prescribe us the latest, trendy miracle pill.

What would become of the healthcare debate if our President and First Lady challenged everyone to take charge of their own destiny? What if there was a nationwide call for everyone to put nutrition at the top of the debate instead of big pharma? Why don’t we focus on preventative measures instead of reactive treatments?

What if we chose to line the pockets of local farmers with our hard earned dollars instead of bankrolling the bottom line of the large corporations of big pharma and the insurance industry?

High blood pressure runs in my family, so does heart disease and diabetes. I’m choosing to reject that fate. I will not be a victim to my genes. I will not sit idly by and wait for my body to turn on me. I’m in control and it feels amazing. I’ve learned to trust my body. I know that as long as I give it the nutrition that it needs, it has the power to keep things running smoothly. Why would I settle for man made synthetic chemicals to make me “healthy” when everything designed to keep me running at optimal health is provided right here in nature? As God intended?

So, Mr. President, I offer you this challenge: rather than handing everyone a shiny new insurance card, why not start with handing everyone a blender, some beautiful leafy greens and the directions to their local farmer’s market? Let’s see what these beautiful bodies are really capable of!

I was simply trying to offer some lighthearted fun commentary on this otherwise toxic and explosive issue. :-D Scuze my goofy grin, but I just had to find some silly kind of way to express what my morning has been like!  While sipping away on my Day 10 Green Smoothie of papaya, grapes, and baby bok choy, I’ve been gleefully checking my inbox and giving my cheek muscles an ironman workout from enjoying all the fantastic e-mails, pictures, and stories you’ve been sending on the last day of our LIVE green smoothie challenge together!  It’s been soooo much fun, and I wish you could just see the way your feedback makes me light up!   And if your green smoothie experiences excite me, I know that they would inspire a whole world of people.  I’m definitely going to add more photo galleries to this green smoothie queendom!

Hello Your Highness!

Today was the 9th day of the 10-day challenge and also my birthday!  I was going all out on Green Smoothies all day until my good friend dropped by with this CAKE!  Not exactly raw and healthy, but a wonderful surprise!  She did not know YOU are already the queen, so no worries (I’m not trying to dethrone you!) ha!  I wake up every morning anxious to get your emails!  And my husband has started requesting GREEN SMOOTHIES for his meals!  We are having so much fun with this!  THANK YOU!!

I was so abso-lettuce-ly THRILLED by this that I completely forgot to wish Carolyn a happy birthday when I replied! So HAPPY BIRTHDAY CAROLYN!! :-P  As I told her, yes we love, love, love green smoothies and raw food, but I really believe that being supported in that way, beautiful cooked cake or whatever, is more amazing for one’s well-being than a whole jug of chlorophyll.  We all need friends like that, and thankfully, a challenge like this really does pull such people together!  We’re all here to add delight and energy and well-ness to our worlds. I see a whole lotta love and support in this image, and THAT’s what I want to help contribute too!

And this doesn’t have to be the end of your challenge.  You can choose each and every morning to wake up and take it one day at a time…  You can remember to look at greens a whole new way each time in you’re in the grocery store and work towards filling your cart with rainbows of  fruits and greens that outnumber the cans and boxes.  Wouldn’t you rather come home with rainbows to fill your fridge?

I’m forever, forever, forever, going to love this photo!  We think it’s the BEST green smoothie mustache we’ve ever been sent!  It’s SO much FUN, it’s passionate, and it’s GREEN! And do you know what Diane said when she sent it? “I hope this photo makes someone else laugh as hard as I was!” It’s sooo easy to spread good, positive energy with others.   You can make them laugh, you can make them smile, and by wonderful-watercress, you can make them a green smoothie!

My heart is green and glowing this morning, and I can’t wait for our next program!  We’re putting together a 21-Day green smoothie detox program for all those who are green, keen, and ready for their next step!  I’ll let you know when it’s ready to roll!

And of course, there’s more good news to come!  Tonight, our challengers will be submitting their entries for our “Lucky Links” contest and SOMEBODY is going to receive a gorgeous Blendtec blender!  Then there’ll be some smiles that may rival my own today!  The deadline is tonight at midnight, E.S.T. Green Smoothie Challenge Testimonials

How’s that for leafily adorable!? And I continue to receive fantastic and encouraging e-mails and testimonials for people who are discovering greens for the first time and finding out for themselves how much better they feel, how much more energy they have, and even how beautiful their skin looks!  Yvonne Bergeron (pictured below beside her post) has been sending me notes on her participation experience with the “Lucky Links” contest and told me she’s been blogging about some of her green smoothie challenge.  This is an excerpt from one of her recent posts:

yvonne-bergeron-austin-texas-march-2010-smIt was super slow at the Spa today.  I had no massages at all, but I had boundless amounts of energy. My boyfriend is now trying the green smoothies too. He can’t get over how much energy I have ;) I am getting ready for Lost, only 8 episodes left and tonight is about Richard!! Enough about that, let’s talk more about my smoothies. Today I had several colleagues comment about my skin, IT’S GLOWING!!! Not in the radioactive green kind of way but in the OMG what are you using kind of way.. Also you have to realize that I work with professional Estheticians; they look at skin all day and they know what problems I have with mine. All of my allergies have caused major breakouts and problem skin my whole life. I am 32 and up until a week ago I had on and off again adult acne. Now my skin is as smooth as a baby’s ;).  I also am losing inches on my legs. I am not a heavy girl but my legs have been a lifetime bane of mine. The more muscle I would put on, the bigger they would look because the pockets of cellulite would just get pushed out further making it look worse. Well I will tell you … today… no more pockets.  Ok ok, they are still there but only I would notice them. I would say that they are 50% reduced. LET’S DO THE HAPPY DANCE!!!! ( Prancing around the room giggling)
OK OK, I am going to get ready for Lost. And go look at my legs in the mirror. HUGE GRIN!!

Green Smoothie Ripple-Maker Award - “Lucky Links” Blendtec Contest

Yvonne is one of the challengers who is participating in our “Lucky Links” contest and is seeking to spread the word about green smoothies and possibly win our “Ripple Maker” award.  I’m looking forward to receiving all our entries on Friday night.  Our contest winner will be receiving the ultimate green smoothie prize - a green-busting Blendtec!

In fact, I checked in on Monday with Blendtec’s own Matt Best!  I asked him how he was finding the experience of the challenge.  He wrote back:

“Honestly I’m loving it.  On Friday we had green smoothie samples here at Blendtec for all our employees.  I have been having about 32 ounces a day of blended green goodness, which has been awesome.  I seem to have more energy and am more alert.”

YAY!  We love you Matt!   Those Blendtec folks are awesome, and I can’t tell you how much I’m looking forward to making someone’s blending dreams come true!  And what’s even better, the word is spreading!  More people are learning about green smoothies and trying their very first tastes of bananas and spinach!  The ripples you’re making will soon be WAVES!

Keeping More “Greens” in your Wallet - Tips for Healthy Groceries on a Budget - Part 2

mom on a budgetWhether your vegetarian, vegan, or still working on improving your S.A.D. lifestyle and trying to ingest a little less of “red dye x” or a myriad of preservatives you need a chemistry degree to figure out, there are options available for you to improve your food choices and save money at the same time.  Even  raw foodists recognize that it’s sometimes necessary to make things ahead of time, dehydrate fruits and veggies, or freeze fresh food for the sake of convenience, time, and expense.

And with those variables in mind, Loretta is back today to share with you the second part of her advice for making family meals on a budget!

Make a Batch from Scratch

Each week I make a large batch of something.  It could be bread, rolls, muffins, veggie burgers, cookies or beans.

When you consider a loaf of bread, you have basically two options.  1) Get the cheap stuff that has like 15 ingredients, but no fiber 2) get the good stuff that has fiber and other nutrients, but costs a small fortune.

breadMy family of six can go through a loaf of bread in two days or less, at $4 per loaf for the good stuff, I could easily spend $12 or more per week on bread alone.  Let me tell you, THAT is not an option for me.  Instead I bake a batch of whole-wheat raisin rolls for about $6.00 (makes about 25-30 servings versus 12-15 in a loaf of raisin bread).  Toss them in the freezer and have fresh, delicious, healthy bread for breakfast or snacks.  Same with hamburger type buns for lunch.  Saves a bundle and there is NOTHING like the smell of fresh baked bread wafting through the house.  I think bread makes the “batch from scratch” case well, but let’s consider veggie burgers in case you need more evidence.

A pack of 4 veggie burgers is $3.29 at my local mega-mart.  That’s about .83 per burger and they are even more costly at regular grocery or health food stores.  I make 50-60 burgers and flavor half as “sausage” and half as regular veggie burgers for about .35 per burger.  I bake them and toss them into the freezer.  The kids grab them, heat and go.  We use them for breakfast or lunch save moneysandwiches and for dinner served with rice or other grain. It’s not every day you can feel good about the food choices a 10-year-old boy makes.  Sunday was such a day.  He grabbed a bun and a burger (well actually 2 buns and 2 burgers) from the freezer and tossed them into the oven, fixed them up and thoroughly enjoyed them.   Are you convinced yet?  Okay, let’s talk beans.

Beans are one of my favorite, “batch from scratch” foods.  Although canned beans are relatively inexpensive, the dry ones are even less expensive and you can avoid the sodium and other additives.  It’s so simple and makes for a great meal.  Cook the beans, freeze in small quantities (I use 2 cups because that’s the size of most cans) and use in recipes that call for canned beans.  It doesn’t get any easier than that.

So, if you want to save time, save money and give your family the BEST take time to make a batch (of anything) from scratch!
