We’re so fortunate to meet people who are as excited about green smoothies as we are!  As soon as Marie-Claude sent in her first picture for her 3-Day Green Smoothie Mini-Course practicum photo, Arugulicious!, The Emerald Empress and I sighed and shared our mutual admiration over Marie-Claude’s creative display!  You can find the delicious recipe that goes along with this green smoothie in The Emerald Lounge under the 3-Day “Final Exam” section.

And since that first photo, Marie-Claude has been lighting us up with green recipes, photos, stories and lines that make us giggle!   So today, we’d like you to get to know Marie-Claude a little better!  We’ll also sprinkle in  more of her green smoothie creations for you to enjoy!

“When I talk about myself, I first say that I am a full time mom of 3 beautiful kids with whom my life is filled with so much love and endless joy…

But I’m also something else!

So let me introduce you to another part of who I am…

I went to study Arts at Concordia University in Montreal 10 years ago.  This is really where I found my personal gesture in drawing and painting…such an amazing feeling to find my true resonance… this path that will always be there to express my deep self!

So from there I did a few exhibitions here and there to put into action what I like doing best!

And amazingly, it is with the birth of my 2 first children that I saw myself painting more! Creation of life is such a powerful state to be in…to create anything we want in life!!!

  • 1 1\2 bananas
  • 1 peeled apple
  • 2 or 3 leaves of swiss chard (to taste)
  • 1\3 cup of coconut flesh and water
  • a few branches of parsley
  • water as needed

Blend all of this together and gently pour it in your nicest glass! Yes … today is a special day! And sprinkle lovely sunflower seeds on top!

Time passed by and after staying 4 years at home with the kids it was time to reenter the labour market!… After one unsuccessful try to work for somebody else, I realized that I HAD to do something I really liked and work for myself… So I dived into the unknown and created my own company of originals clothing!  whohooooo!!!

Hearty Coconut Soup (Young Green Coconut, Avocado, Tomatoes, Lettuce, Lemon, Kelp, Cummin,turmeric, Chili Powder)

coconutI was wanting something that would fill me up, and was inspired to make a coconut soup after reading a post at the Raw Diva Powder Room. I didn’t have any coriander (cilantro) or lemongrass, so made the most of what I did have.

Hearty Coconut Soup

This makes about one litre of soup.

  • green coconut - meat & water
  • avocado
  • 100g cherry tomatoes (3.5 oz)
  • head of lettuce
  • small lemon - juice
  • 1 tsp each cummin and turmeric
  • 2 tsp kelp powder
  • 1/2 tsp chili powder

Just put it all in your blender and blend away!

I didn’t use lettuce because I didn’t think of it until I’d finished my soup. <grin> Although it would go very well with the soup. Something else I didn’t think to add was a clove of garlic. Garlic is a favourite at our home, and I put it in just about everything savoury. This is a very filling soup, and I only had 3 cups even though I was very hungry (normally I’d have 5 cups of soup for dinner, but don’t tell anyone!). This makes up enough for two very large servings, or four smaller servings.

A Green Smoothie Will Never Let You Down (Parsley, kale, blackberries, banana and coconut water)

young coconutsTwo weeks ago, I was in NYC attending a class and one of our lectures was on Raw Food. The talk was given by David Wolfe and it was very interesting. I have heard him speak before in Orlando, but his talk on Sunday was on the theory behind Raw Foods. One of the topics he shared with us was the value of adding leafy greens to our diet. It was wonderful to see so many people excited and really interested in creating their own green smoothie recipes.

I have been out of commission with a stomach virus and bronchitis since the last weekend I was in NYC, but I haven’t let that stop me from drinking some type of green smoothie or green juice every day, I’ve also made sure to hydrate my body with lots of water and I usually crack open a coconut every other day to sip that delicious coconut water and boy does it taste great going down, not to mention all of the nutritional benefits of the coconut water. I’m not feeling 100%, but on the days where I feel too weak to prepare a meal for my family, my blender or juicer come in handy.

I believe that the vitamins and minerals in the leafy greens have helped to heal my body. As a mom or dad, I’m sure a lot of you can relate to the fact that I don’t have time to not feel well. I still have a 27 month old running around who needs my attention. Believe it or not Connor helped me make the smoothies, and while making the juice, Connor was able to feed the produce through the juicer to make a delicious green concoction and that made both of us really happy.

Green Smoothie Recipe

  • One bunch flat leaf parsley
  • Two kale leaves
  • One cup blackberries
  • One banana
  • One cup coconut water

Blend and Enjoy!

Green Juice Recipe*

abundance of fruits and vegetables

  • One bunch kale
  • Two green apples (use any variety of apple you have on hand)
  • One inch ginger
  • One to two ribs celery
  • Two carrot sticks

*If you don’t have a juicer on hand you can use your blender to blend all of your produce and then you can strain it through a nut milk bag.

Luscious Tropical Smoothie (Coconut, Spinach, Mango and Banana)

Luscious Tropical Smoothie - makes up one litre (one quart)

  • 1 green coconut - flesh & water
  • 100 g baby English spinach leaves (3.5 oz)
  • 1 mango (just the flesh!)
  • 2 or 3 bananas

When making smoothies, I like putting in the greens and water (in this case coconut water) first, and blending this up until it’s smooth. Then everything else goes in and is blended again.

This is a fantastic smoothie for a special treat. Yum! I’m making one up tomorrow morning, and cannot wait. Can you see me salivating?

Now, for an encouraging story. :-)

Hubby and I visited his brother-in-law last week and stayed overnight. When I made up my green smoothie (banana & mango) my 12 year-old nephew expressed how gross it looked. Well, I convinced him to give it a try (after all, he’s a big, tough footy player!). He gingerly sipped the first bit, then promptly sculled the rest of his smoothie and helped himself to a glass of wonderful green smoothie from my jug! :-O  How great is that???? Just to show how fantastic this is, his family doesn’t eat many fruit & vegetables, and their fridge and freezer are chock full of meat and packet stuff - mostly for deep frying. I can’t tell you how good it felt to see him enjoying something so healthy.

Tropical Green Smoothie with Coconut, Pineapple and Spinach

This past weekend my brother-in-law (my husband’s brother) came to visit and we started talking about the island of Hawaii where my mother-in-law was raised. I could only imagine growing up with the natural beauty of this breathtaking island living amongst the serenity of pure bliss.

My husband and I celebrated our first anniversary on the second largest island in Hawaii which is Maui, and I also had an opportunity to meet my mother-in-law’s sister. Maui was breathtaking, and I wondered what life was like living on a tropical island where the air was filled with the rich floral scent of a variety of tropical flowers that made me smile from ear to ear. After spending a week exploring the natural beauty of this island, I had the feeling that I would vacation in Hawaii for years to come.

I was inspired by my conversation with my brother-in-law so I decided to create a tropical green smoothie that our whole family could enjoy. I was filled with excitement and decided to create a pretty simple green smoothie that was full of flavor and easy for anyone to create.

Coconut, Pineapple and Spinach Smoothie

  • The meat from one young coconut (this website will give instructions on how to open a young coconut, http://www.rawguru.com/html/openyoungcoconut.html)
  • Coconut water (one large coconut should produce approx. 1 ½ cups of water)
  • 2 tablespoons of raw coconut oil
  • Half of a pineapple or one cup
  • Large handful of spinach

Blend and enjoy!
