Fruity Treasure Pops: How to Make Healthy Fruit Popsicles

Wednesday, June 16th, 2010 by stacey

healthy fruit popsiclesBelieve it or not, it’s hot and sunny (finally!) as I type this today in beautiful Winnipeg, Manitoba!  Normally, my city has a reputation for ice and snow (and the occasional flood here and there), so with thoughts of winter always lurking, perhaps it’s fitting that I’m coming to you today with a frozen raw food treat!

In anticipation of the 7-Day Summer Slurping Sensation, I’ve been challenging myself to come up with some new ways to enjoy my fruits and leafy greens together.  A few rainy days ago, I whipped up a little recipe for fruit popsicles, and it’s finally nice enough today to enjoy them.  So you’ll have to forgive the somewhat sticky, juicey fingers that are bringing you today’s summer healthy idea because I’ve been enjoying the fruits, quite literally, of my icy labours!

As a kid, I think I survived my summers on freezies… You remember… those little plastic frozen rods of water, sugar, and dye?   Heheh… the more psychedelic and unnatural the colour, the more I wanted to try it.

Well… thankfully, my freezie days eventually came to an end, but if anything, I think summers only get hotter here in Manitoba, so it would  be really nice to have a raw food frozen treat on the blistering, scorching days when -40 degrees Celsius doesn’t seem like such a bad thing after all.

Thankfully, I now have the knowledge and the creativity to make that happen!  If you’re content to let Mr. Freezie remain in whatever igloo he came from indefinitely, then I invite you to try one of my fruity treasure pops!

Raw Raspberry Pudding - A Summer Surprise!

raw raspberry pudding

This delectable dish was an accidental discovery on my behalf. I had made up too much raspberry smoothie and so I put the last 1.5 cups into the fridge overnight. When I was feeling a bit peckish this afternoon I remembered it was there. YUM!!!

I’m going to do this more often, and especially when it’s summer (it’s winter in Australia, but this will be a great summer treat for many of you!). This is also a great way to get lots of greens in when you aren’t used to them because you can’t even taste the greens in this raw food recipe. If you don’t tell your friends or family that you added spinach, then there’s no way they will know it is in there. (more…)

Raw Food Cheesecake: Worth. Every. Nanosecond!!

Have I ever told any of you how much I love my job!?  I tell ya… working for Tera Warner and The Green Smoothie Queen often feels like a dream come true.  Besides getting to read an abundance of raw food and nutritional information that continues to reinforce the lifestyle path I’m on, once in awhile, there’s something special, really special, that comes across my editing desk.

That was most definitely the case when I got a sneak peek at The Decadent Gourmet by Angela Elliott.  And even though I’m a fan of eating green food and always start my day with a good old fashioned glass of lawnmower pulp -  yes, my beloved green smoothies -  I have to admit, reading through all the raw food cheesecake, ice cream, cookies, and cobbler recipes took a bit of a toll on me.  But it was an educational read too.  Anyone like Angela who has found a way to make dessert guilt-free is a dear friend in my heart!  (more…)

Holiday Memories of Persimmon Treats…Food of the Gods? (Persimmon, Bananas, and Nutmeg)

Persimmons
What would holiday memories be without our special holiday foods?  When think back and remember our  family celebrations I can literally smell and taste the wonderful foods.

This year I’m remembering a new food — Persimmons!

I first experienced persimmons this fall when the Body Enlightenment System recipes I was using included many persimmons. I remember looking suspiciously at the somewhat odd-looking fruits at my local food co-op. I wasn’t sure how to choose the best ones, and I have to admit the price seemed more than a little high to me. However, after tasting the sweet juicy persimmons I decided they were more than worth that price!

After falling in love with persimmons I started feeding that love as often as possible. In addition to simply eating the glorious food in all its wonderful goodness, I made persimmon smoothies and puddings regularly. From simply blending a persimmon into pudding for a fun treat, to making it into a nutritious green smoothie — persimmons became a regular treat I looked forward to!

Simply Persimmon Pudding or DrinkCelery

  • 1-2 Soft ripe persimmons
  • 1-3 celery stalks, depending on preference and desired consistency
  • water to desired consistency (add a little at a time!)

This simple persimmon pudding or drink was my first experience with blending persimmons, and I found that they blend up wonderfully thick and decadent, and if you let the blended mixture set just a little while it is sets up like a pie filling! In my experience if I want to be able to drink it, especially through a straw, I have to include quite a bit of water! I also discovered that I LOVE the combination of persimmons with celery. Of course I now love just about any fruit blended with celery so I should no longer be surprised at these wonderful combinations.

persimmonThe second time I went to the store I noticed two different types of persimmons: Hachiya and Fuyu. The heart-shaped Hachiya must be very soft before eating them, but the Fuyu, shaped more like a tomato, can be eaten while still hard. However, I’ve only eaten either type when they are soft as I prefer the texture. I also eat organic persimmons so that I can eat the entire fruit without peeling it. The main reason I don’t bother to peel it is because I am lazy. So far this has not affected the consistency of my smoothies or puddings.

While the nutritional content of each type of persimmon varies somewhat, both seem to be excellent sources of vitamin C, beta carotene, and minerals. To me, this makes it an especially excellent fruit to enjoy during the challenging cold season here in Wisconsin. And the enjoyment … oh, some say that persimmons are the “Food of the Gods” and I think I agree.

So, you can imagine how I felt when I wasn’t able to find any persimmons at the few grocery stores I had a chance to stop at while in Texas on our Christmas trip. While I was thrilled with all of the wonderful fresh citrus, I was a bit sad that I couldn’t make the Holiday Persimmon Smoothie that my BES Buddy, Alissa, had given me the recipe for shortly before I left to head south.

Then, as we were heading back north there they were — just a few ripe persimmons in the produce section of the unsuspecting grocery store located just off of the Interstate…I caught my breath in anticipation! I looked at them, went back to filling my cart with the “travel essentials” on my list, and then went and stared at them again…I couldn’t resist. So, I purchased two wonderfully ripe persimmons to stash in our cooler until I could get into the hotel that night. I practically drooled thinking about those juicy persimmons the rest of the day!   Later that night I pulled my Blendtec blender out of the cooler I keep it in while traveling (don’t you travel with your blender?), and whipped up a custard-like smoothie that will forever be part of my Christmas memories!

Perfect Persimmon Holiday Green Smoothie

submitted by Alissa

Blend:

  • a handful or kale and about 1/2 cup of water together

Add  and blend together:

  • 2 bananas
  • 2 persimmons
  • 1/2 cup of water (less for a pudding consistency, more for a smoothie texture)
  • freshly grated nutmeg (about 1 tsp)

Think of sitting by a warm fire when drinking.

A Christmas Green Smoothie Dessert: Strawberries, Baby Spinach, Aloe Vera, Bananas and Dates

Monday, December 22nd, 2008 by stacey

baby spinachI wanted to try something new with my family this year so I came up with a strawberry green smoothie for dessert that I will serve on Christmas Day.  We have been spending the holidays in Atlanta with my family for as long as I can remember and every year we get together to laugh and talk about old memories and enjoy good food.  Well I have been talking to my family about raw foods and if you could hear some of the comments and questions that come out of their mouths, you would be shocked! Well needless to say, I decided that instead of talking about how delicious the foods taste and the fact that you  can actually taste the flavors of foods when they haven’t had all of the nutrients cooked out of them, I’m going to give them a little sampling with a delicious recipe for a srtawberry green smoothie. My family loves dessert and what could be better than the sweet taste of strawberries.

This is a pretty big undertaking because my family is pretty confused about most of the things I believe in.  When I became a vegetarian back in the early 90’s, they thought I was crazy and also thought that I was depriving myself of meat.  When I really started paying attention to how much waste we consumed and started asking everyone to recycle, well they were… confused.  :-)

Wish me luck, but  I’m going to prepare a very simple strawberry smoothie for dessert.  My secret ingredient for this recipe is aloe vera. In a previous blog, Disa mentioned using aloe vera in her green smoothie and I was excited to read this since I started using aloe vera in my green smoothie as well. I think I’ll mention the aloe vera in the green smoothie after my family has tasted how delicious this smoothie truly is. If you have family members or friends who don’t understand your lifestyle or your way of eating, don’t give  up, just set an example and let your actions speak for themselves.

Aloe Vera

aloe veraAloe Vera, also known as Medicinal Aloe, is a species of a succulent desert plant originating in northern Africa.  As a skin care therapist, I have seen the many wonderful benefits of using aloe vera in skin care treatments, but the health benefits of aloe vera go way beyond skin care treatments. Here are some of the amazing health benefits of aloe vera. Information taken from the editor at http://www.naturalnews.com

Family Slushie (Frozen Green Smoothie with Bananas, Mangos, and Spinach)

Friday, December 12th, 2008 by Aran

green smoothie slushie - bananas and mangoes
We’ve been buying extra mangoes and bananas because they are in season Down Under, and freezing the extras. I went to make a large batch of mango smoothie, and discovered a slushie!

Summer Green Slushie!

  • 200g (7oz) frozen baby English spinach leaves
  • 4-6 frozen bananas
  • 3 frozen mangoes

I put the above ingredients into my food processor and processed them on high until they were chopped up. I then slowly added water (to the desired consistency) and didn’t want to wait for it to thaw out, so had it as a smoothie. This made up 2 litres (quarts).

Yum!!! What a great summer dessert.

Blessings,
Veronica
