Parsley is the world’s most popular herb. It derives its name from the Greek word meaning “rock celery” (parsley is a relative to celery). It is a biennial plant that will return to the garden year after year once it is established.

Parsley contains two types of unusual components that provide unique health benefits. The first type is volatile oil components - including myristicin, limonene, eugenol, and alpha-thujene. The second type is flavonoids - including apiin, apigenin, crisoeriol, and luteolin.

We’re so fortunate to meet people who are as excited about green smoothies as we are!  As soon as Marie-Claude sent in her first picture for her 3-Day Green Smoothie Mini-Course practicum photo, Arugulicious!, The Emerald Empress and I sighed and shared our mutual admiration over Marie-Claude’s creative display!  You can find the delicious recipe that goes along with this green smoothie in The Emerald Lounge under the 3-Day “Final Exam” section.

And since that first photo, Marie-Claude has been lighting us up with green recipes, photos, stories and lines that make us giggle!   So today, we’d like you to get to know Marie-Claude a little better!  We’ll also sprinkle in  more of her green smoothie creations for you to enjoy!

I went to study Arts at Concordia University in Montreal 10 years ago.  This is really where I found my personal gesture in drawing and painting…such an amazing feeling to find my true resonance… this path that will always be there to express my deep self!

So from there I did a few exhibitions here and there to put into action what I like doing best!

And amazingly, it is with the birth of my 2 first children that I saw myself painting more! Creation of life is such a powerful state to be in…to create anything we want in life!!!

  • 2 or 3 leaves of swiss chard (to taste)
  • 1\3 cup of coconut flesh and water

From SAD to Smiles!

I know by the time February rolls around, it seems like my mood and emotions permanently set up camp in the basement, and they choose the dreariest and most miserable corner of that basement they can find.  Then they turn out the lights until about June.  This year, my goal is to fight back!  And thanks to Kate, I now have some great ingredients in my arsenal!

‘Blue’ Smoothies!

Boost your mood with a smoothie!

Any fellow sufferers feeling a little blue from S.A.D. (Seasonal Affective Disorder) as winter inches its way along will be cheered by these happy-making ingredients for ‘Beat-the-Blues’ smoothies…

To the usual mix of 40% green leafy veggies and 60% of fruit, try adding any of the following…

  • Sesame seeds: these are one of the richest sources of the amino acid threonine (low levels of which are one of the culprits for depression). A spoonful of raw tahini mixes best.
  • A teaspoon of raw chocolate powder (high quantities of phenols, antioxidants which boost the mood) and N-acylethanoloamine, a chemical which stimulates the brain to produce endorphins.
  • Nuts are a good source of omega-3’s, B-vitamins, magnesium and protein, all providing mood-enhancing qualities. Hazelnuts and almonds are particularly good for supporting the nervous system.
  • Bananas: starchy carbohydrate which helps to produce serotonin.
  • Broccoli sprouts, which contain folate, a natural protection against depression, plus you get as much antioxidant in 25grams of broccoli sprouts as you would if you ate 1.36 kilograms of fully grown broccoli.
  • Parsley: an abundant supplier of B-vitamins. Also a good source of glutamine, a potent brain food, and essential nutrient for healing.
  • Avocado: rich in omega-3’s, lecithin (protects cells from oxidation and largely makes up the protective sheaths surrounding the brain) and also acts as a ‘nutrient-booster’ enabling the body to absorb antioxidants more efficiently.
  • Raw honey: contains small amounts of antioxidants and is wonderful for busting S.A.D. sugar cravings!

Experiment and enjoy! And don’t forget a good dose of daily fresh air - even if the sun isn’t shining!

Hey Green Smoothie Super Star!

Here’s an interesting taste treat you might like to try.

I’ve been using more fresh parsley in my salads, juices and in my smoothies…today I made a super tasting powerhouse:

parsley - green smoothiePears, Pineapple, Parsley!

  • 2 ripe pears
  • 1/3 of a fresh pineapple (approx)
  • half a frozen banana (to add body and potassium)
  • 1/3 of a large bunch of parsley (approx)
  • 1/2″ slice of fresh ginger
  • 1 cup of filtered water
  • 1 cup of ice cubes (optional)

**I have a Blendtec - so I add a cup of ice cubes on top of everything, too…
this is thick and creamy - eliminate the banana and add more water if you want a thinner outcome.

I’ve recently been in the mood for green grapes and pineapple, so I thought I’d put together a summer drink to celebrate just how glorious it feels here in sunny Orlando, Florida.

Remember, you too can make your own version of a summer drink with fruits and vegetables you have on hand.

Cool Summer Drink Recipe green-grapes

  • Small handful parsley
  • One cup pineapple chunks
  • One cup green grapes
  • One banana
  • One cup coconut water

Another Way to Eat Leafy Greens (Kale and Creamy Tahini Dressing)

andrea-beamanThis past weekend I traveled to New York City to attend a class and on Saturday night I had the pleasure of attending a cooking class with Andrea Beaman. You may have heard of Andrea, she was a contestant on the show Top Chef. There were about 20 of us sitting in Andrea’s living room as she demonstrated 3 recipes.

I decided to come home and try one of her recipes.  I am using raw kale vs. the steamed kale Andrea used in the recipe. The creamy tahini dressing will offer a wonderful savory flavor, which is a nice change from the sweet flavors that I usually enjoy in my green smoothies.

You may use any variety of leafy greens that you have on hand. The beauty of creating your own recipes is what makes this blog so exciting and fun. I love to read the recipes that everyone creates and my hope is that we all continue to create mouth watering recipes for the world to enjoy!

kaleKale and Creamy Tahini Dressing Recipe

1 bunch kale (you may use any variety of leafy green) shredded

Creamy Tahini Dressing *

  • 1/3 c. sesame tahini
  • 3 tbsp. Nama Shoyu (Nama Shoyu is a raw unpasteurized soy sauce)
  • 3 tbsp. umeboshi vinegar (Made from umeboshi plums. You may also look for ume vinegar, it’s the same thing)
  • ½ bunch parsley, chopped
  • ½ bunch scallions, chopped
  • 1 c. water

* Recipe created by Andrea Beaman, a natural foods chef and holistic health counselor

Blend all ingredients for tahini dressing in a food processor or blender. Dress your leafy greens with the tahini dressing.

Juicy Limes

I recently dined at a great raw food restaurant here in Orlando and had this great drink. I wanted to re-create it adding parsley, and share it with everyone because I can’t get the taste out of my mind.

Refreshing Smoothie Ripe Pear

  • ½ Bunch flat leaf parsley ( you can also use curly parsley if you like)
  • 1 Cup strawberries
  • 2 Pears
  • 2 Bananas
  • Juice 1 lime
  • Grate 1 lime
  • 1 inch fresh ginger
  • ½ cup water (optional)

Blend and enjoy!

Healing Your Stomach: Green Smoothies And Supple Yoga Moves

It feels good to bottle health for family and friends. Today, I bottled one green juice and two green smoothies for a friend who was recently hospitalized for stomach-related issues. Since being released, she hasn’t had much of an appetite, so I figured fresh green juice and/or the green smoothie would be the perfect food for her to sip on to assist her healing journey.

The top bottle in the picture shown here is of the juice: kale, 3 apples, 1 pear (because I ran out of apples), 1/2 lemon.

The bottom two bottles are of the smoothie, which turned out silky smooth. The ingredients used to make that were:

  • ~ a couple handfuls of Kale
  • ~ a handful of Parsley
  • ~ two Pears
  • ~ a few slices of Pineapple
  • ~ half an Avocado
  • ~ about 1 teaspoon Cold Pressed Olive Oil
  • ~ about 1 teaspoon Bragg’s Apple Cider Vinegar
  • ~ Water (didn’t measure — maybe a cup or so)
  • ~ dash of Cayenne Pepper
  • ~ about 1 1/2 teaspoons Agave Nectar*

*note from the editor:

we strongly recommend whole dates and fresh fruit over agave nectar.

Now, I’m about to send my friend this blog entry suggesting she also “Thread the Needle” as a way to massage her abdominal organs and rejuvenate her entire system. What a nice complement to her green drinks!

“Thread The Needle?” she’ll ask.

~ On all fours in Table position (hands about shoulder width apart), begin lowering the right temple to the floor while “threading” the right arm under the left arm. (The left hand is planted on the floor.) Feel a nice stretch behind the shoulder. Hold for a few seconds while inhaling and exhaling through the nose.

~ Return to all fours and repeat on the opposite side.

To increase the stretch, raise the non-threaded arm toward the ceiling and hold for a few breaths.

Feel renewed now, Michele? ;-)

Green drinks and stretching! Does healing “medicine” get any purer than that? Why get a needle when we can just “Thread the Needle”? :-)

Tabouli Smoothie (Savory Green Smoothie: Parsley, Tomatoes, Red Pepper, Avocado, lemon)

tabouli savory green smoothie Last week I wanted something savoury but was really hanging out for a smoothie, so I combined the two! I had a lovely, large bunch of fresh parsley and decided to put it to good use. Since I was using my mini food-processor rather than a blender, I removed most of the stalks first.

Tabouli Green Smoothie

Blend Together:

  • large bunch parsley
  • 4 tomatoes (Roma tomatoes are nice)
  • 1/2 small red capsicum (bell pepper)
  • approx 3″ continental cucumber
  • flesh of one avocado
  • 1 small clove garlic
  • juice of 1/2 lemon
  • Celtic Sea Salt
  • one shallot stalk (spring onion)
  • water to thin (if needed)
  • Cold pressed olive oil is best to use and preferably extra virgin.

This was a great evening meal for me, and the parsley is very refreshing. If raw garlic is too strong for you, then you can crush it and soak in it the olive oil for a few hours first.

Last night we had dinner at a friend’s house and they had spring rolls that were so amazing. I was a little embarrassed because I had too many to count (I had 5), I told myself that it was okay because they had fresh vegetables in them and were not fried. I think deep down I knew that the peanut sauce for dipping would have been okay if I stopped at 2 or 3 rolls, but I just couldn’t help myself they were so delicious.

So today I decided to make my own version of the spring rolls and guess what, I couldn’t stop eating them. And it’s funny how we can justify what we are doing to convince ourselves that what ever we are doing is okay.

After devouring the spring rolls, I knew that the only thing that would make me feel better was a green smoothie loaded with parsley. Parsley has such an amazing effect on my emotional state. Whenever I drink a green smoothie made with parsley I think of a fresh meadow. I can’t tell you why this is, but it brings a smile to my face. Tera in a previous blog talked about adding parsley to her green smoothies and I totally understand why she said that parsley is “magical.” I totally agree with her!

Not only did I decide to add parsley to my smoothie, I added alfalfa sprouts, apples and blueberries. I decided to find a quiet place in my house and take some time to do some deep breathing and slowly savor the taste of this fresh green drink. I felt as if the parsley detoxed the spring rolls out of my body, or maybe just out of my mind!

If you are ever feeling like life is overwhelming or you’re feeling out of balance, just grab your blender and make yourself the biggest, greenest, tastiest smoothie you can, and let it put the biggest smile on your face.

Blueberries, Apples, Alfalfa Sprouts and Parsley Green Smoothie

  • ½ cup blueberries
  • 4 large apples (I tend to like the tart sweet varieties)
  • 1 handful alfalfa sprouts
  • 2 handfuls of parsley (I like the flat leaf variety, but feel free to use either the flat leaf or curly variety. You can use less parsley if just starting out.)
  • 1 cup water (optional)
  • ¼ cup agave (optional)

Blend and enjoy!
